Powdered Lecithin

Powdered Lecithin is used to help preserve your bread and to help stop crumbling. Lecithin improves the moisture tolerance and uniform suspension of ingredients. It stabilizes fats and oils, reducing rancidity and prolonging freshiness. To use, add 3 Tbsp. per 3-4 cups of flour. Can also be used as a vegetable oil replacement in bread making. 25 oz. (708.8g)
