Popovers Recipe

Popovers are a delectable addition to any meal. The warm quick bread is perfect way to warm you up on a cold winter night. Because this recipe yields 12 to 16 popovers, it is also perfect for the frequent family meals you may have during the holidays.

The name popover comes from the way the rolls popover when they cook. This creates a cavity in the roll that is the perfect spot to add butter, which quickly melts from the heat.

  • 4 eggs
  • 2 cups milk
  • 2 cups all-purpose flour
  • 1 teaspoon salt

  1. Start by heating your oven to 400 degrees. If you have custard cups, you’ll want to grease 12 of them. However, you can also use cupcake cups, but because they are smaller, you’ll need to grease 16.
  2. In a large bowl, beat eggs slightly. Add the milk, flour and salt. Beat all the ingredients together until they become smooth. It’s important you don’t overbeat the mixture. Just ensure it is smooth.
  3. If you are using custard cups, fill them ½ full, and if you are using cupcake cups, fill them ¾ full.
  4. Bake for 25 minutes.

Note: Avoid opening the oven door repeatedly as it may prevent the popovers from popping over. If this occurs, they will taste the same, but you won’t get the inner cavity that gives them their unique look.

When done, remove the popovers immediately from the cups and serve hot.

The popovers are perfect with just butter, you can add just about any filling you like, such as a seafood spread or jam for a sweet breakfast bread.

If you have leftover popovers, wrap them, and store them in the fridge. Just remember to warm them up in the microwave or oven before you eat them again to get that hot treat.
